Once Cuvee has the beans in stock, they wait until we place an order before raosting them. The pound of coffee you bought at the grocery store or at your local coffee shop was most likely roasted weeks (or perhaps months) ago. It was likely roasted in a huge roasting facility several weeks before it even hits the shelves at your local store. The batch size is usually hundreds of pounds and consistency is non-existant. The simple fact is that coffee begins to become stale in a matter of days, not weeks. We pride ourselves in the fact that the coffee we serve was small-batch roasted within 48 hours of the time we're preparing it which ensures our customers the highest degree of quality, freshness and taste in their coffee experience.

The Coffee
Coffee has become a staple among American diets and has been consumed throughout the world for at least 500 years. In the US, coffee is consumed in the home, in drive-thru Bucks Boxes and at artisan dens nestled among used counches and acoustic accompaniment.
In all its forms and varieties, it's one of the most consumed beverages in the world. Yet how to select and prepare coffee is quite misunderstood and most often poorly executed. In face, you are most likely drinking bad coffee and don't even know it.
The fact is, the vast majority of the coffee consumed, especially in the US, is either of poor quality, or improperly prepared. The Bistro is the exception, not the rule.
The Grind
You probably don't realize that ground coffee has lost much of its flavor just twenty minutes after grinding. You may think you're saving time by buying pre-ground coffee, but you're sacrificing what little flavor was left in the probably-stale beans. Our coffee is ground freash daily, just before brewing. Espresso is, of course, ground as the barista is preparing the drink. We also use the best burr grinder on the market to provide a consistent, high-quality product.
The Bean
Many coffee roasters order bulk shipments without knowledge of where the bean came from, how it was grown or when it was harvested. In as much as fine wine is dependent on the quality of the region, the grape, and the wine maker so coffee is dependent on the region, the bean and the grower. The Bistro has partnered with Cuvee Coffee, a company who not only knows the intricate skill required to roast premium coffee beans, they travel to farms where they purchase coffee, meet the owners and harvesters, inspect their operation and sample each season's havest before selecting the beans that go into their products. The Water
A cup of coffee is 99% water, meaning that your water must be pure and clean before brewing. The Bistro installed a massive reverse-osmosis water system built and maintained by EcoWater Systems. This system removes all contaminants and leaves just 75 parts per million of minerals in the water. That is the target zone for water to be pure while maintaining proper taste qualities. EcoWater replaces filters and services the system monthly.
The Drink
The Bistro offers a wide selection of coffee drinks. Whether you prefer a straight drip, French press or non-fat vanilla latte, your beverage is prepared by trained, experienced Baristas on high-quality equipment. We use a La Marzocco GB5 espresso machine, FETCO brewer and Mahlkonig grinders. Our flavored syrups are non-high fructose corn syrup blends that provide a rich, flavorful drink. All of these elements are combined at The Bistro for one thing: you, our customer.
Coffee Beverages
The Drip
Drip brewing, or filtered coffee, is a method for brewing coffee which involves pouring heated water over roasted, ground coffee beans contained in a filter. Water seeps through the coffee, absorbing its oils and essences, solely under gravity, then passes through the bottom of the filter. The used coffee grounds are retained in the filter with the liquid falling (dripping) into a collecting vessel such as a carafe or pot. Paper filters are commonly used for drip brew all over the world. Brewing with a paper filter produces a clear, light-bodied coffee, which is free of sediments, although lacking in some of coffee's oils and essences, which are trapped in the paper filter.
The Espresso
Espresso is not a type of coffee, it is a brewing process and is the heart and soul of a modern coffee shop. It is a concentrated beverage brewed by forcing a small amount of nearly boiling water under pressure through finely ground coffee. The Espresso machine is specifically designed to create this beverage that is used in many of our drinks.
The Americano
The Americano is prepared by adding hot water to espresso, giving a similar strength but different flavor from regular drip coffee. In the United States, Americano is used broadly to mean combining hot water and espresso in either order, but in a narrower definition it refers to adding water to espresso (espresso on the bottom) , while adding espresso to water (espresso on the top) is instead referred to as a long black. The Bistro Americano consists of pourint 8 (short) or 12 (tall) ounces of hot water over a double-shot of espresso.
The Chai
Chai (referred to at The Bistro as Christmas in a Cup) is a beverage that originated in the Indian subcontinent and is made by brewing tea with a mixture of aromatic Indian spices and herbs. The word "Chai" simply means "tea" in much of South Asia. Preparation includes mixing tea with the spices cardamom, cinnamon, cloves, ginger and peppercorn. The Bistro Chai is made with these traditional ingredients which are then mixed with steamed milk, providing a very sweet, aromatic beverage without any coffee or Coffeine. Iced Chais are a popular cold drink for hot summer days in West Texas.
The Tea
We talk a lot about coffee at The Bistro because we love it! Tea, however, is also a big part of The Bistro. We carry a variety of Mighty Leaf teas for those who prefer a hot tea experience! Mighty Leaf has developed a handcrafted tea bag that uses unbleached cotton, no glue or staple and the whole tea leaves, not tea dust found in bulk paper bag teas. If you're a leaf-head (tea lover) try The Bistro tea experience and see the difference!
The Iced Latte
Summers in West Texas are brutal. These high temperatures and crazy Lubbock winds sometimes make a hot beverage less than desirable. On those days, ask for one of our cold coffee beverages. Our iced lattes are made with cold milk instead of steamed, and topped with some our famous Bistro ice. Don't forget to ask about our Italian cream sodas, a fruity alternative to a coffee-flavored drink. Refreshing and tasty!
The Press
The French press, also known as a press pot or coffee press is a simple brewing device that uses a coarser grind and a metal screen to separate the coffee from the liquid. There is no paper filter in a press, allowing more flavor and essential oils to create a bolder, richer flavor.
The Latte
A latte from the Italian caffe latte (meaning "coffee and milk") is a coffee drink made with espresso and steamed milk. The Bistro latte is made by pulling two shots of espresso, then steaming milk to a nice, consistent micro-foam which is then blended into the espresso. Flavored syrups (such as Vanilla or Hazelnut) can be mixed into the latte to sweeten it. Many establishments sell drinks such as the caramel macciato which is simply a caramel latte with whip cream on top and caramel Drizzled on the cream. The Bistro Baristas can prepare any type of latte or similar drink found in other coffee retail stores.
The Mocha
A mocha is a varant of a latte, with Ghirardelli chocolate added to the espresso and steamed milk to sweeten the drink. Like a latte, The Bistro mocha is made by pulling two shots of espresso, then steaming milk to a nice, consistent micro-foam which is then blended into the espresso and chocolate. To decorate the drink, baistas often add foam and cocoa powder to the top of our mochas. We also offer the Ghirardelli white chocolate mocha and a Ghirardelli carmel latte for our customers with a sweet tooth.
The Hot Chocolate
There's not a lot to explain about hot chocolate! The Bistro version is made with steamed milk and Ghirardelli chocolate. It's favored for its rich chocolate flavor without being too sweet. Cold, windy days in Lubbock are a lot easier with a soothing Hot Chocolate from The Bistro!
The Cappuccino
A cappuccino (from the Italian "Capu-chin" literally meaning "small cap") is a favorite beverage among bean-heads (coffee lovers) . The Bistro cappuccino is a traditional Italian drink made in a small cup called a demitasse. It differs from a latte in that there is less milk and more espresso, making for a stronger, bolder flavor. The top, or "Small cap" is a layer of steamed milk foam.
The Blended Latte
Blended Lattes are made by combining espresso with a specially crafted powder designed to add flavor and create a cold, delicious drink. Powder works better than syrup in cold drinks. Probably because of physics, but we prefer to think it's because of the magical coffee fairy. She loves The Bistro.

The Ingredients
Good food starts with quality ingredients. At The Bistro, we buy whole flour, bags of sugar, quality meats and fresh vegetables. Many restaurants today sacrifice quality for profit. They purchase mass-produced foods that contain artificial flavors and chemical preservatives. Walk into most kitchens and you'll see shelf stable meats and powdered dairy products. That simply won't fly at The Bistro. While we haven't been able to get to the point where 100% of our foods are organic, all-natural selections, we are certainly trying. Our ingredients are hand-selected by our chefs and they are treated with tender-loving care. We use Extra Virgin Olive Oil, raw sugar and even have a selection of soft drinks that use real sugar instead of high fructose corn syrup. We believe the secret to a quality sandwich is starting with quality food and that's why we spend so much time finding the right ingredients for The Bistro.
The Preparation
The Bistro kitchen doesn't have a grill or a fryer. We chose a menu that can be cold prepared and stored fresh. We work from scratch anytime we can and it's our favorite way to cook! Anyone who has worked a booth at a fair, or in a fast food kitchen knows what it's like working with a fryer. The grease aerosols and spreads onto every surface, including food prep tables and even the food itself. No fryer means no grease which gives The Bistro its clean healthy feeling in every bite.
The Recipe
Most restaurants hire cooks, not chefs. A chef understands flavor nuances while a cook simply wants to slap food on a plate. Our interview process is designed to find chefs who are passionate about food. We want people who love what they do in the kitchen creating masterpieces that linger with you throughout the day. Food isn't just about "getting a bite to eat", it's about getting value for your money. The chefs are constantly experimenting with different flavors to make their creations both tasty and unique.

We've discovered that people love a good cup of soup! Most of our soups are made from scratch because it makes a difference! Frozen soups made in stainless steel factories by women in hair nets simply doesn't cut it at The Bistro. We dare you to find a better soup in Lubbock, TX.
