丸亀製麺は、全国のお店すべてに製麺機を置いて小麦粉から"打ちたての麺"を作り、それをその場で茹でて"茹でたての味"を実現しています。なぜなら「新鮮なうどんは感動的においしいから」。これは丸亀製麺の創業者が、讃岐うどんの本場、香川の製麺所で身をもって体験したことです。いいうどんは水を良く吸い、うまく茹で上がるとお米が炊きあがったときのような、小麦粉のいい香りがします。
