손님이 도착하면 앞에서 샤리에 식초와 소금으로 간을해서 밥테이스팅부터 시작. 모든재료의 영수증을 공개하며 눈앞에서 준비과정을 다 보여줄 정도로 고객과의 교감을 중요시한다. 스시를 쥐어서 접시가 아니라 고객의 손에 놓아주는것도 이집의 가장 큰 특징중 하나. 긴자가 아니라 오타에 있는점, 직원없이 부부가 운영하는점이 비싼재료를 쓰고도 가격이 낮은 이유라고 한다
