Try the lamb hand-pulled noodle soup. The broth looks clear and insipid, but it couldn't be more flavorful—full-on but clean-tasting lambiness laced with just enough chile oil.
Cash only! Get there early for lunch - it gets PACKED quickly. But worth the trouble. I got the noodles and a lamb kebab. Yum. I'm already looking forward to my next trip.

The hand-pulled noodles (biang biang mian) are otherworldly, stretched and banged on the counter right in front of you and then cut into jagged, chewy strips.

Do NOT get the hand pulled noodles by themselves. The noodles are coated with overly salty and dosgustingly flavored chili sauce. I felt sick afterwards. Go for soup instead.
