    Their vinegared rice here is prepared from 3 different grains, from 3 different years. Cooked with red vinegar to give it a darker shade than usual

    Some really innovative sushi here, but is not all edgy stuff. Hamamoto-san delivers the traditional items beautifully as well. His red vinegar sushi rice is awesome too!
