Our cold prepared foods sections provide a great deal of convenience, & have a wide array of perfectly prepared vegetables, pastas, grains, & salads, as well as fish & meat entrees. If you’d like something cold heated up, we’re more than happy to do it.
It is very difficult to stop eating our spiced grilled shrimp once you start. They are perfect for a party spread or an hors d’oeuvre tray, or even a movie-watching snack instead of popcorn.
Sauteed Chilean Sea Bass
With white wine & fresh herbs. An individual portion of Chilean Sea Bass seared & sautéed w/ white wine & fresh herbs. The exterior is slightly browned & crisped, & the delicate meat within is tender & flaky.
Grilled Salmon
With sliced lemon & dill. An individual portion of tender grilled salmon fillet in a light, citrus-y sauce.

Our hot entree & carving board section offers you freshly roasted & grilled meats (like pork loin, leg of lamb, roast beef, glazed duck legs, & rotisserie chickens) as well as hearty sides (like potatoes au gratin, creamed spinach, pastas & risottos) ready to serve for yourself, your family, or a dinner party. Arancini
A much loved Sicilian specialty, arancini (Italian for oranges) are saffron-infused arborio rice balls surrounding a center filled w/ beef Bolognese sauce, fresh mozzarella, & green peas. Once stuffed, arancini are breaded & lightly fried to a golden color, which is how they earned their name.
Ricotta Cheese Tortellini
With smoked italian pancetta & peas. Ricotta cheese tortellini tossed w/ crisped lardons of Italian smoked pancetta & fresh green peas in a light pink cream sauce. We typically make more of this dish right before the evening rush, since it seems to be a dinner time favorite.
Pasta alla Norma
This Sicilian classic is beloved by all. What’s not to love when you combine a rich homemade pomodoro sauce, lightly fried eggplant, & grated ricotta salata w/ a great al dente pasta?
Wild Rice
With chestnuts & shiitake mushrooms. This earthy, nutty, & wholesome side dish pairs well w/ just about anything.
Prepared Foods: Pizza & Focaccia
Agata & Valentina’s pizzas & focaccias are made from scratch by hand every morning by our skilled pizzaiolo, Caesar. Baked in our traditional stone pizza oven, they can easily be confused w/ the best you’ll find in Italy.
Pizza alla Nonna
Grandmother-style. This is one of our favorite pizzas. Satisfyingly square-shaped (with those yummy corners people seem to like so much) , this pizza is topped w/ our house-made pomodoro sauce, fresh mozzarella, fresh basil, oregano, & a touch of sea salt & extra virgin olive oil. It’s a simple delight.
Fresh Homemade Focaccia
Airy, yet satisfying, our fresh focaccias are flavored w/ extra virgin olive oil, herbs, & sea salt. (We even make a delicious whole wheat focaccia!) Toppings: Tomato, Onion, Wild Mushroom, Roasted Pepper, Mixed Vegetable, & Plain.
Torta Pasqualina
Torta Pasqualina is a traditional Italian Easter item originating in Liguria. We make it all year because it’s just so good. This savory tart consists of a light filling of shredded spinach, Parmigiano Reggiano & fresh ricotta cheeses, & eggs within a delicate pastry crust.

With homemade croutons. Tender romaine hearts tossed w/ our classic, creamy Caesar dressing, parmigiano shavings, & our homemade herbed croutons.
Mozzarella Bocconcini Salad
With fresh basil & grape tomatoes. Our mozzarella bocconcini salad is the ultimate play on a traditional Caprese. We combine bite-sized balls of fresh, creamy mozzarella, sweet/tart grape tomatoes, & fresh basil w/ top-shelf extra virgin olive oil to make one of one of our most popular salads.
Wheatberry Salad
With cherry tomatoes & red onion. Toothsome & nutritious wheatberries combined w/ cherry tomatoes, sliced red onion, fresh basil, & a touch of lemon juice & extra virgin olive oil.
Greek Salad
With kalamata olives & aged feta. Tender romaine hearts tossed w/ briny kalamata olives, barrel-aged feta cheese, sweet multi-colored peppers, sliced red onion, & our homemade herbed croutons.

With cranberries & toasted pine nuts. Shaved carrots roasted & tossed w/ toasted pine nuts, cranberries & basil - another one of our healthy-yet-amazing options.
Maple Syrup Roasted Butternut Squash
With cranberries & toasted pecans. This dish is satisfying in every way. The sweet earthiness of the maple syrup-roasted butternut squash is nicely balanced by tart cranberries & toasty pine nuts.
Roasted Tomatoes
With garlic & parmigiano reggiano. Roasting brings out the soul of a tomato. We roast halved plum tomatoes w/ chopped garlic, Parmigiano Reggiano cheese, & savory herbs.
Zucchine Infornate
Shredded zucchini & yellow squash baked w/ Parmigiano Reggiano cheese & bread crumbs until the top of the pan is nicely browned. Miraculously, it is both nutritious & absolutely delicious.

Homemade Chicken Soup
A&V’s chicken soup is made from scratch & you can taste both the great ingredients & loving care that goes into it. Our version, w/ substantial pieces of white meat chicken, carrots, celery, onions, shaved turnips, & shredded cabbage in a robust homemade broth, will cure what ails you, or just put you in an all-around good mood.
Seafood Bisque

We hand slice smoked salmon in many varieties including Scottish, Irish, Norwegian, Icelandic, Western Nova, Eastern Gaspé, as well as our own Gravlax, which we cure in-house.

Hand-sliced. We import these succulent, savory grilled, marinated artichokes from Italy, & they shine brilliantly in any antipasto spread.
Organic Irish Smoked Salmon
Hand-sliced. Our organic Irish smoked salmon is raised on a 100% organic diet under humane conditions in protected deep ocean waters off the coast of Ireland. This salmon is just lightly smoked, which imbues it w/ a delicate flavor & sophisticated subtlety.
Sicilian Green Olives
Our large Sicilian green olives (pitted & un-pitted) have a bright, briny/acidic flavor & satisfying, semi-firm flesh. They are extremely versatile, & can be served on their own, marinated w/ lemon zest, herbs & garlic, or plopped into a martini!
Homemade Gravlax
House cured & hand-sliced. Our house-cured gravlax is made w/ market-fresh Atlantic salmon rubbed w/ salt, pepper, sugar, & dill, & cured for a minimum of 24 hours. This is a customer favorite in our Appetizing department because of its phenomenal freshness & flavor.
Scotch-Style Smoked Salmon
Our Scottish-style smoked salmon has a beautifully silky texture & subtle, yet deep smoky flavor.
Wild Sockeye Smoked Salmon
Alaskan (pre-sliced) . Wild Sockeye smoked salmon, w/ its beautiful, ruby red flesh, is highly sought after for its spectacular, rich flavor & silky texture. These salmon are line caught at sea in the pristine waters off the coast of Alaska.

Breads
We are extremely proud of our bread department – it is small, yet mighty! Our fresh breads & rolls are made by the finest artisan bakers in the city, & arrive in small deliveries every morning. We’re happy to slice any whole loaf upon your request.
Health Rolls
With organic seeds & oats. These hearty, satisfying rolls are made w/ stone ground whole wheat flour, organic sunflower seeds, organic flax seeds, organic rolled oats, & organic sesame seeds. Hints of wildflower honey & sea salt help them rise to a level of deliciousness you wouldn’t necessarily expect from a “health roll.”
Semolina Bread
With fennel seed & white raisins. A very unique loaf: the crunchy semolina-encrusted exterior gives way to a moist, tender interior studded w/ golden raisins & fennel seeds. The sweetness of the raisins & the subtle anise-flavor of the fennel seeds make this bread an excellent addition to a cheese & honey plate.
Brick Oven Ciabatta
The most fragrant, flavorful Italian peasant-style bread we’ve come across. Its toothsome, gnarly crust is irresistible – everyone who tries it raves.
Poilane Loaf
This is the signature hand-crafted loaf from the famed family-run Poilane bakery in Paris. Baked in a wood-burning oven, this dense, fragrant, slightly tangy sourdough loaf acquires a thick, golden crust, which carries the signature mark “P” for Poilâne. This bread is well suited to soft cheeses, cured meats, & smoked salmon. The size of the slices also makes them excellent for sandwiches.

Our skilled butchers are absolutely dedicated to the craft of meat cutting. We do not bring in any pre-cut product, but rather butcher our own steaks, chops, filets, etc. from primal cuts ourselves on-premises. We offer full scale butcher services, & are happy (even excited) to custom cut to your specifications.
We source genuine, dry-aged Prime Beef, Organic Poultry, & Berkshire Pork, as well as Grass-Fed & Organic Beef from top local & national producers.

In the afternoon & evening, stop by for a pressed panino, homemade pastry, or choose from a well-curated selection of our hot & cold prepared foods. Ewe’s Blue
(Roquefort-Style) Local from the old chatham sheepherding co. Local/NY Hudson Valley: The only roquefort-style blue cheese made w/ 100% sheep's milk available in the US, Ewe's blue has a rich, creamy texture & subtle blue overtones. Fantastic on its own, in salads, or paired w/ wine & fruit.
Hudson Valley Camembert
Local from old chatham sheepherding co.. Local/NY Hudson Valley: A highly regarded soft-ripened camembert-style cheese, it's made w/ a combination of old chatham's sheep's milk & a neighboring farm's BGH-free cow's milk. This lush buttery cheese stands well on its own & compliments any meal.
Vento D’Estate
Italy: The name translates to “summer wind.” This Italian semi-hard cow's milk cheese is barrel-aged under a blanket of mountain hay & wild field herbs, which imbues it w/ pronounced herbaceous & floral aromas, as well as a robust sweet/lactic flavor. Pairs well w/ a robust red wine.
A&V Handmade Mozzarella
Handmade in-house throughout the day. This mozzarella is so fresh, so creamy, so addictive, you run the distinct risk of finishing off a whole ball in one sitting. Made at our cheese counter by hand throughout the day – salted & unsalted.
Harpersfield Tilsit-style Cheese
Local from the brovetto dairy. Local/NY Hudson Valley: This semi-hard washed rind cow's milk cheese is cave-aged & has a flavor reminiscent of aged gouda - rich, buttery, hint of butterscotch - w/ a little bit of lactic sourness & the suggestion of wild aromatic herbs. Great for slicing; pairs well w/ assertive beers & wine.
Kunik
Local from nettle meadow farm. Local/NY Husdon Valley: Kunik is a unique & voluptuous triple-cream cheese made w/ a blend of pastured goat milk & jersey cow cream. This cheese manifests some of the best qualities of a pastured goat cheese (tart, tangy, grassy) , elevated by the supple buttery-ness of the jersey cream. You will not want to stop eating this one.

Don Puglisi Chocolate Bars
From modica, sicily. These luxurious chocolate bars are painstakingly hand-made in Modica, the chocolate capital of Sicily. The cold production process & avoidance of modern machinery preserve the full flavor & quality of the ingredients, & create a very unique & satisfying crumbly/coarse texture (quite different from industrially produced chocolates) . Flavors: classic, bergamot, vanilla, cinnamon (all 45% Cocoa)
Michel Cluizel Chocolate Bars
We have a broad selection of bars from this world-renowned master of the art of chocolate. Some are made from blended cocoas from different plantations, & some are made from single-source cocoas from one particular location. No matter which you select, you will be carrying home a confectionery gem.
A&V Chocolate Truffles
Handmade. These hand-rolled chocolate truffles made by our pastry chef are ultra-rich, creamy, & decadent: the perfect combination for any true chocolate lover.
Guylian Chocolate Seashells
Belgian, filled. With their seashell chocolates, Guylian merges beautifully sculpted shapes w/ the exquisite flavor & texture of the finest belgian chocolate. Each chocolate is filled w/ rich roasted hazelnut praliné, which is a heavenly combination of finely ground roasted mediterranean hazelnuts & belgian milk chocolate.
Coffee
We’ve got some of the best-quality beans in the city! One of our customers recently admitted to us that she lives downtown & travels all the way to 79th street every Saturday to get her hands on Agata & Valentina French Roast coffee beans, which, she told us, are better & more addictive than chocolate. We think the same can be said about any of our fantastic roasts & blends.
Colombian Supremo
Mellow & smooth. This top-grade coffee is hand picked & lightly roasted. Columbian Supremo presents a deep, mellow body & a full, smooth flavor, hinting at cocoa beans & cream w/ just a hint of earthiness.
Torrisi Espresso Coffee
Our sicilian exclusive. Our Torrisi-brand line of espresso coffees, imported exclusively by Agata & Valentina, are custom blended & roasted by Agata's family in sicily.
Agata's Blend
Rich & satisfying. A fantastically rich, satisfying blend of Columbian supremo, kenya aa, & central american breakfast blend.
French Roast
Full-bodied & strong. Composed of Columbian coffee beans roasted to a dark, reddish color, our full-bodied French Roast is somewhat strong & pleasantly spicy.
Dairy
We source the highest quality milks, yogurts, butters, & more to fill our dairy display. Take a look, & explore our world of local, grass-fed milks & yogurts, rare sheep’s & goat’s milk products, an abundance of specialty & flavored butters, & even a special whipped cream from Italy!
Latte Milano Dolce Panna
Italian whipped cream. Italian whipped cream in a can can’t be beat! Rich & creamy, this stuff leaves the chemical-ly American supermarket versions in the dust!
Pamplie French Butter
Barrel-made w/ sea salt. This is a traditionally-made butter from the french region of Charentes, famous for the quality of its milk production. Pamplie produces a perfectly creamy, unctuous butter w/ delicate, natural flavors including a faint suggestion of hazelnut.
Evan's Farmhouse Yogurts
Local, certified organic. Local: Evan's farmhouse is a small, family- owned & operated, certified organic dairy in Norwich, NY. The Evan's family raises pasture-fed jersey cows, which are known for their extremely creamy milk. Evans farmhouse yogurts are not homogenized, so you will find a very fine layer of rich cream at the top of each container!
Old Chatham Yogurt
Local, made from sheep's milk. Local: lovely sheep’s milk yogurts from one of our favorite new york hudson valley farms. Old chatham’s yogurts are made w/ 100% pure pasteurized sheep’s milk, w/ absolutely no artificial thickeners, gums, stabilizers, or anything else that doesn’t come right from the sheep!
Deli & Salumeria
Our Deli & Salumeria is absolutely packed w/ artisanal salumi & charcuterie. We have an excellent & almost endless selection of imported Italian specialties like Prosciutto, including Prosciutto di Parma & San Daniele, Speck, Bresaola, Mortadella, & innumerable varieties of Salami. Our Italian selection is complemented by excellent deli favorites (both hot & cold) like homemade roast beef, fresh roasted turkey breast, porchetta, pastrami, brockwurst, knackwurst, kielbasa, andouille, merguez, chorizo, & more.
Guanciale
Guanciale is a favorite among top chefs for a reason. A cured bacon made from pork jowl, it is incredibly flavorful (more so than standard bacon or even pancetta, which come from the pork belly) , yet delicate, & works wonderfully in classic pasta dishes such as Carbonara & Amatriciana, or anywhere else you’d like to incorporate a rich, pork flavor.
Speck – Italian
Speck, a smoked, cured, juniper-infused, slightly drier variation of prosciutto, is a specialty of the far northern Alto Adige region of Italy near Austria. Thinly sliced Speck is extremely versatile, & can be enjoyed in a sandwich w/ crusty Italian bread & fresh mozzarella, paired w/ cheeses on the fresher/younger end of the spectrum, wrapped around sweet fruit like figs or melon, or just eaten plain for the pure enjoyment of it.
Fresh Roasted Turkey Breast
Every day, we season & roast whole turkeys in our kitchen, & make the still-warm breast available to be hand-sliced in our deli.
Prosciutto di Parma Classico
Italian. Prosciutto di Parma is truly the king of Italian cured meats, & our “Classico” version (one of many we carry in our Salumeria) is our favorite. Made only from specially raised pigs in the province of Parma, Italy, every single prosciutto is held to exacting standards by inspectors from the Agency for Parma Ham Quality before it can be branded “Prosciutto di Parma.”
Fish Market
One of the most vibrant departments in the store, our Fish Market buzzes w/ activity all day as our fishmongers hand-cut & display a colorful array of pristine whole fish such as Red Snapper, Brook Trout, Branzino, Sea Bass, Arctic Char, & other seasonal selections fresh from the market that morning.
Agata & Valentina's Fish Market also boasts an abundant shellfish selection, including cockles, manila clams, local bay scallops (when in season), head-on Hawaiian shrimp, & 3 to 5 varieties of oysters every day. House made crab cakes, tuna burgers, fresh shrimp salad, & more prepared items are available for take-away at our Fish Market’s prepared foods case.
We are pleased to work directly w/ many local fishermen & small suppliers, many of whom can be found fishing near Montauk, at the far tip of Long Island. Throughout the year, we regularly have local, seasonal specialties such as black bass, striped bass, monkfish, lemon sole, & others taken from the fishing boat directly to Agata & Valentina. Just ask our fish mongers what’s local on any given day!
Head-on Hawaiian Prawns
These are the sweetest shrimp we’ve ever tasted, by far. The more adventurous eaters among us will savor the whole thing, including the unbelievably flavorful head!
Wild Striped Bass Fillets
Wild striped bass is a very tasty fish, w/ the tender but substantial flesh that comes from being wild, as opposed to farmed. The meat is pearly white & carries the unmistakable taste of the ocean. In season, our striped bass is sourced locally (just off the coast of Montauk, NY) .
Blue Point Oysters
From long island sound. Our blue points are the genuine article from nearby long island sound. A local favorite & arguably one of the best oyster varieties available, they are cold, briny perfection.
Whole Branzino
Branzino is a very mild, delicate white fish w/ an appealing melt-in-your mouth quality. We love whole roasted branzino stuffed w/ lemon & herbs – a truly Mediterranean dish.

Agata & Valentina’s gelati & sorbetti are made in our kitchen in small batches from the finest natural ingredients. The results are vibrant, fresh, rich, & sometimes fruity w/ a delightfully smooth, creamy consistency.

Our private label sicilian honeys are gathered & packaged for us in the hills near agata’s home town of catania, on the east coast of the island. This intensity & clarity of flavor absolutely translate to the honeys produced in sicily. Pure honey varieties: eucalyptus, chestnut, wild flower, prickly pear. A&V Balsamic Vinegar
From modena. A true classic, our private label balsamic vinegar is made for us according to traditional methods by a small producer in modena, italy. This deep brown, sweet/sour, intensely flavorful condiment is sequentially aged in a variety of woods (cherry, oak, chestnut, etc.) , which gives the final product incomparable depth of flavor. Drizzle over salads, grilled vegetables, or even ripe strawberries! For an extra-special treat, try one of our aged balsamics – we have a 10 year-old & a 30 year-old!
A&V Sicilian Extra Virgin Olive Oil
Unfiltered. This unfiltered, transulcent yellow-gold olive oil is made from olives harvested by hand in sicily. The flavor is bright & lightly fruity w/ an underlying hint of almond. You can really use this oil for everything w/ excellent results.
A&V 100% Coratina
Apulian extra virgin olive oil. Every year, louis balducci personally selects the batch of this phenomenal single-varietal olive oil that we put under the A&V label. The coratina olives that are used to make this grassy & slightly peppery oil are hand-harvested in the hills that surround louis’ father’s farm in puglia.

Macaluso Canned Sicilian Tuna
We discovered this extremely special canned (yes, canned!) tuna while visiting Palermo. Because of the particular salinity & mineral composition of the Mediterranean Sea around Sicily, the seafood there is widely considered to be the best you can get. While we can’t get our hands on fresh fish from Sicily quite yet (never say never…) , we think that this lovely tuna lives up to the illustrious reputation.

Mellin Pastina
Teeny tiny pasta cuts. This Italian line of teeny tiny pasta cuts is absolutely perfect for the youngest pasta aficionado-to-be. Cut into fun shapes like stars & rings, the miniature bits of pasta can be eaten easily by tots who don’t even have all of their teeth yet. Confession: some of the grown-ups working at A&V really like it too! All of the Pastina products cook in 4 minutes or less.
Rustichella Pasta
Rustichella d’Abruzzo is an 80 year-old pastificio in the heart of Abruzzo. Their wonderful pasta is produced by traditional means, extruded through bronze dies, & dried at low temperatures. This painstaking artisanal production process gives Rustichella pasta its excellent flavor & texture.
La Casa del Grano Fregola
Fregola is a unique Sardinian semolina pasta product, produced by hand-rolling semolina dough into small spherical beads. The raw fregola balls are then twice-dried, once in the sun & once in the oven, creating an uneven surface, nubby texture & toasty flavor. Moistened w/ vegetables & stock, they make a lovely bed for fleshy fish or even meaty stews. Try it in soups, instead of rice or couscous, or even w/ a nice pasta sauce.
Organica di Sicilia Organic Whole Wheat Pasta
An excellent organic whole wheat pasta w/ a great texture. We also happen to be partial to Organica di Sicilia, since it is from Agata’s homeland of Sicily.

A great Italian pasta for kids, Zoo Pasta keeps them entertained w/ a variety of animal shapes & keeps them nourished w/ tomato & spinach flavors (they’ll never know that they’re eating their vegetables!) .
Pasta - Fresh, Handmade
When you visit Agata & Valentina, you will inevitably stroll by our fresh pasta department. There, you’ll most likely see one of our pasta makers rolling out homemade egg pasta dough, hanging it to dry on traditional bamboo dowels, & cutting it into various shapes, including spaghetti, linguine, papardelle, & even lasagna sheets. This is how the best fresh pasta is made in Italy, & this is how we do it here, w/ no short-cuts & great ingredients.
We offer our fresh pastas in a wide variety of flavors – plain semolina, whole wheat, spinach, tomato, porcini mushroom, saffron & pepper, meyer lemon (when in season), squid ink & more…. If you don’t see the flavor of pasta you’d like in the exact cut you’d like (spaghetti, linguine, tagliatelle, papardelle, chitarra, etc.), just ask (with a little advance notice if possible), & we’ll be happy to cut whatever dough you’d like into whichever shape you prefer. Please note: All of our fresh pastas are made w/ eggs.
Fiocchi & Fiocchetti
Both of these filled fresh pastas are shaped like delicate, almost floral, beggars purses. The Fiocchi, which are larger, hold a sweet/savory combination of fresh pear, & robiola, Grana Padano, ricotta & taleggio cheeses. The fiochetti, which are quite small, harbor pockets of delectable gorgonzola cheese.
Homemade Manicotti
Available plain & w/ spinach. Handmade semolina pasta sheets rolled around creamy, airy fresh ricotta cheese. Available w/ both plain ricotta & spinach & ricotta fillings.
Spaghetti alla Chitarra
This is a very special cut of semolina pasta, originating in the Abruzzo region of Italy. To make spaghetti alla chitarra, the pasta dough is passed through a piece of equipment called a chitarra (Italian for guitar) , which has thin metal strands strung between two sides of a wooden box. The result is a long spaghetti-like pasta w/ a square cross section, which turns out to be a pretty great shape for pasta. We found our chitarra in an artisanal cookware shop in Bologna, & have been making spaghetti alla chitarra feverishly ever since!

Tri-color Fettucine
Tomato, spinach & semolina. Fettucine pasta in three colors/flavors – Tomato, Spinach, & Semolina. We only use whole, nutritious ingredients, i.e. fresh green-leaf spinach, & Sicilian tomato paste (no fake flavorings or powders!) , to create our flavored pastas. Imagine what that means for vegetable-averse youngsters!

Moretti Polenta Meal
Imported from Italy. We carry two types of artisanal dry polenta from Italy under the Moretti brand: "Fioretto" is fine ground & "Taragna" is coarse ground w/ buckwheat. These polentas are produced in the town of Bergamo, in the Lombardia region of Italy, which is famous for its polenta. Here, the Moretti family oversees the selection of optimal corn varieties, the kernels of which are air-dried in open barns until hardened. The dried kernels are then stone ground & packed in air-tight, vacuum-sealed bricks so that the polenta's freshness & flavor is preserved.
Panetelleria Lentils
The world-renowned agricultural bounty of Pantelleria, a volcanic island off of the west coast of Sicily, includes lentils, capers, & figs. The Pantelleria lentils we carry are a true delicacy: tiny, tasty, & a truly genuine Sicilian ingredient.
10 Grain Pancake & Waffle Mix
Bob’s red mill produces some of the best quality, most nutritious grain-based products around, & we think their pancake mix is top notch. The mix (which contains freshly milled wheat, whole wheat pastry flour, rye, triticale, oats, corn, barley, soy beans, brown rice, millet, & flaxseed) creates delectable pancakes w/ a hearty texture that you can feel absolutely virtuous about.
Farro Perlato
Farro, considered to be the mother of all grains (the ancient Etruscans, Egyptians, & Romans were quite fond of it) , is an ideal apparatus for incorporating more whole grains into your diet. The hulled grain is pleasantly chewy w/ a distinct sweet, wheat-y taste & is very nutritious (high in fiber, vitamin B, & protein) . Farro perlato makes an excellent addition to vegetable dishes & soups, can be prepared following slightly modified risotto recipes, & is great served simply as a side dish or first course (just briefly sauté cooked farro perlato in olive oil, & toss w/ freshly grated Parmigiano Reggiano) .
Organic Quinoa
Quinoa is gaining quite a reputation these days. Though it cooks up similarly to starch-heavy grains like rice & couscous, it has a full set of essential amino acids for humans, making it an unusually complete protein source. It is also a good source of dietary fiber, calcium, iron, magnesium, & phosphorus. And, if all of that wholesome nutritional content doesn’t sway you, just know that it tastes fantastic too – nutty w/ a little textural bite.
