Cabernet Sauvignon is the core varietal of Napa Valley. Cabernet likes the heat & sun of Napa Valley so it can reach ripe aromas & tannins which make the varietal very exciting. Although, as w/ every wine, the balance between tannins, acidity, mouth feel & aromas has to be respected. In light of this, we add a touch of Merlot for softness, Cabernet Franc for spice & Petit Verdot to strengthen the wine

The diversity of clones & our cool climate vineyards make our Chardonnay unique. The natural high acidity allows us to ferment 100% in barrels, & go through 100% Malolactic Fermentation. We strive to accomplish the best of both worlds - high acidity & minerality like a traditional Burgundy yet w/ roundness on the palate as a traditional California Chardonnay.
Sauvignon Blanc Napa Valley 2012

At Alpha Omega, our goal is to create a balance between Bordeaux-style Sauvignon Blanc, which we barrel fermented to give more of a mouth feel, & a New Zealand-style Sauvignon Blanc, which is crisp, fresh & expressive. Sauvignon Blanc is a varietal w/ a high acidity, so we never allow it to go through Malolactic Fermentation to ensure we keep the backbone of freshness & the varietal’s fragile aromatics.
Proprietary Red Napa Valley 2010

The Proprietary Red is a classic Bordeaux-style blend w/ a high percentage of Cabernet Sauvignon, but also a greater presence of Merlot, Cabernet Franc & Petit Verdot. This type of blending tends to make a wine that is denser, w/ more diversity in its profile. Due to the almost equal balance of Merlot & Cabernet Sauvignon & equal balance of Cabernet Franc & Petit Verdot, we consider this a bit more of an “intellectual” wine.
LATE HARVEST NAPA VALLEY 2009 Bottle

The Late Harvest is made out of two varietals, Sauvignon Blanc & Semillon. They are left on the vines for an extended period of time, for a fungus called botrytis, the noble rot, to grow on the skins. Botrytis creates channels through which water can evaporate in order to concentrate the grape w/ sugar. Our Late Harvest is a typical Sauternes style of wine, but our goal is to make sure to have enough acidity to balance the sweetness.
