Origin: piemonte taly milk: cow, sheep, goat, type: soft approximate age: 18 months, this cheese is ripened for 8-10 days. & is also a blend of 3 milks, It has a beautiful herby attack w/ some green vegetable notes, followed by a fresh lemony acidity from the goat's milk. The sheep component is a subtle, round note at the end & contributes to a long, satisfying finish.
Gorgonzola Dolce Latte
Origin: lombardia, italy milk: cows, type: blue vein approximate age: 6 months, this is the milder version of Gorgonzola – sweet & gentle, rich & creamy. There is still a touch of spice from the pale blue mould, but it is quickly tamed by the incredible creaminess of this cheese. Gorgonzola Dolce Latte has a luscious texture w/ some super-runny patches here & there. even people who say they don’t like blue cheese like this.
Vento D' Estate
Origin: italy milk: sheep, type: semi-hard age: 4-6 months, the name translates as'summer wild'. This cheese is aged in a wine barrel w/ hand mown hay from the high mountains. This creates an intense mouth filling flavour w/ a lingering herbaceous aftertaste.

Origin: vale tallegio, italy milk: cow. type: washed rind age: 2 months, this cheese is supple in texture & it has an edible rind that is washed in seawater w/ a sponge to keep the mold at bay. It is creamy & has a lovely hay-like flavour. It is comparatively mild if other soft cheeses are being considered.
