Unity Brew - December 2011
On november 19, alberta brewers met at big rock brewery in calgary and worked together to create a special brew for charity. Wild rose was pleased to participate once again this year and to join forces with our brewing brothers and sisters to collaboratively brew for charity. 2011 participating breweries are wild rose brewery, big rock brewery, brew brothers, alley kat, drummond, banff ave brewing, jasper brewing co., grizzly paw brewing company and brewsters brewing company. All proceeds from unity brew 2011 - a nicely hopped blonde style ale - went to the calgary food bank.

Every few months we come up with some pretty interesting brews that are produced in limited quantities. These "seasonals" are unique to the season (hence the name) and will make the beer geek in all of us giddy with excitement.
Royal 100 - (Sept '10 - Sept '11)
Mount royal university celebrated its 100th anniversary in 2010. although mount royal has evolved with the times and needs of our society, their commitment to students and the community has only strengthened with a century of achievement. Royal 100 was a celebratory beer that was brewed by wild rose specifically for the mount royal centennial. With a reddish hue and a well balanced flavour, this beer was a highlight of the celebrations. Initially brewed as a summer seasonal, demand dictated that we keep the wraspberry ale around all year. Our wraspberry ale is brewed using whole raspberries – no syrups or extracts. An even handed use of the berries makes this ale so much more beer than your average fruit beer. It has a pronounced aroma of raspberries and just a hint of berries in its flavour.
Real Raspberry Ale
You will not find any preservatives in this thirst quenching ale. But additives? That's a different story, as each brew of wild rose wraspberry ale is infused with thousands of natural, juicy-red additives called raspberries. 4.5% alc./vol.

Think You Know What S.O.B. Stands For?
At wild rose it’s “special old bitter.” however, this leads to the small problem of dealing with the words “old” and “bitter” - not exactly two words you want describing your beer.
Regardless, we celebrate the fact that our S.O.B. Is brewed in the classic english style of an ordinary bitter. When you make great beer, why hide behind fancy words trying to convince everyone it is something other than what it really is? Wild rose S.O.B. True to style and whatever you want it to be.
Classic English Ale

Wred Wheat From Wild Rose, of Course
A wild rose original, wred wheat ale has been with us a long time. After a brief hiatus in 2003, our wred wheat made its triumphant "on-tap" return in 2006 with the opening of the wild rose taproom. Eventually we came to our senses to bottle this fan favourite.
What makes our wred wheat ale distinctive? Perhaps it’s the combination of six types of malted wheat and barley. Or maybe it’s the variety of hop additions that delicately “spice” the brew? Regardless of the technical aspects, our wred wheat is uniquely wild rose.

1996 was the year, brown ale was the beer. Back when wild rose brewery was merely a barley-based dream, the idea of this original brown ale was born. Now recognized as a modern day classic, this beer successfully pays homage to the time-honoured british beer styles of the past.

Best Brown in Town

India Pale Ale
Why our IPA isn't just an IPA sometimes the best things come from a less than ideal situation. Back in the 1700s, british brewers were charged with the important task of exporting palatable beer from england to colonists in india. After many failed attempts to successfully ship the brews overseas, trial and error pointed towards a solution.
In order to keep the beer fresh and delicious on the long and hot boat journey, brewers discovered that using mighty doses of hops and brewing to a higher alcohol level would keep the beer tasting great. Our tribute to this unique ale tale is wild rose IPA; true to its roots and a real brew of integrity.
Authentic India Pale Ale
Wild rose IPA (india pale ale) is a beautiful copper-coloured ale, rich in caramel malt character and well balanced with plenty of hops. An authentic india pale ale, this IPA is handcrafted for the true ale drinker. So hop to it. 6.0% alc./vol.

This award winning beer tastes nothing like a nationally distributed IPA that you may have heard of. Of course, the nationally sold IPA is not at all true to the style, so we're ok with the differences. We recommend pairing this robust beer with some serious food like alberta beef or some hearty, delicious the best wurst like we serve at the wild rose brewery taproom.
Oatmeal Stout a Classic in Canada
Alberta Crude Oatmeal Stout
As with all of our recipes, this is a beer that we loved when we first brewed it, but regrettably had to shelve it until we had a suitable venue to sell it in. Now with our taproom we are pleased to offer an alternative to the other stout. Black as its namesake, with a creamy tan head, this oatmeal stout is velvety smooth with low carbonation. Six different malts, hops from the U.K. and (of course) oatmeal contribute to this ale's complex character. Join us in our taproom and try a fresh stout for a change.

We love great beer and we love creating new recipes. In fact, we've even developed a way to share these new brews with everyone. The result is our seasonal release program where every other month (or so) we brew up our hand-crafted beers and make them available until they run out.
Wild Rose Rye Saison - Limited Availability!
Collaboration: wild rose brewery and cowtown yeast wranglers our collaboration brew was created to celebrate 16 years of innovation and torecognize our strong connection to the homebrew community. Hazy, golden in colour this ale is brewed using the best alberta malted rye and barley. A special belgian farmhouse yeast provides a notes of fruit and pepper in aroma and flavour. The end result is an effervescent and refreshing ale for warm alberta autumn days. Rye saison is available on tap and in 650ml bottles at select locations!
Wild Rose Hoodoo Hef - (June-July '12)
Hefeweizen inspired by traditional weisse beers of bavaria, this wheat ale is hazy gold and naturally cloudy. Canadian malted wheat blends with a specially selected yeast to give clove-like spiciness to the aroma and flavour. A refreshing thirst quencher for warm alberta summer days.
Wild Rose Foothillz Pilz - (March '12)
Czech style pilsner the best pilz in the foothillz is back by popular demand! This lager is a beautiful straw coloured hue, with a distinct hop aroma and flavour. Crisp, clean and refreshing our czech style pilsner has been crafted to satisfy. Brewed using canadian superior pilsen malt the generous addition of saaz, vanguard and tettnanger hops provides a spicy, citrus aroma and a pleasant lingering bitterness. Like all good lagers our foothillz pilz has undergone an extensive cold aging period producing a smooth, complex beer. A favourite in our seasonal release program this year's batch is sure to please. Food pairings ~ this crisp, refreshing lager is very versatile and pairs nicely with a variety of foods including chicken, fish, shellfish and spicy fare. The foothillz pilz also makes a great aperitif!
Wild Rose Nocturnale - (December '11)
Dark as night, nocturnale has a smooth, creamy mouthfeel with a roasty malt flavour combined with the richness of dark chocoate and a hint of toasted coconut. Here in time for the winter solstice, albertans will experience 967 minutes of darkness on december 21st - plenty of night time to savour a nocturnale or two.
Wild Rose Marzen - (September-October '11)
Marzen has its origins in bavaria and is best known as the classic brew of the oktoberfest celebration. A copper hued lager, wild rose marzen is characterized by a medium to full body, a toasty malt flavour and a clean dry finish.
Wild Rose Af23 Pale Ale - (May-July '11)
Af23 pale ale is back! Named after the building that houses wild rose brewery, af23 pale ale is a nod to the historical heritage of our home on the currie barracks. This hoppy pale ale is balanced by using some of the finest alberta-grown malted barley: pale 2-row as the base malt, a bit c-60 (crystal malt) , and some munich malt. The addition of some flaked oats gives this brew smoothness on the palate. Exclusive use of falconer’s flight hops creates a clean, long lasting bitterness. This hop is a special blend of some of the northwest’s most unique hop varieties. Dry hopping with more falconer’s flight hops finishes this fine brew with notes of citrus and fresh pine in the flavor and aroma.
Wild Rose Imperial IPA - (Jan-Mar '11)
A.K.A. M.A.D. I.P.A. Wild rose brewery’s imperial india pale ale is like a big bitter smack to your senses! You may not like it, but we do! The finest alberta malts were blended with six kinds of the freshest pacific north west hops to create a truly inspirational imperial IPA. Mark, andrea and dave have collaborated on this amazing beer to challenge your palate and amaze you with its complexity. The result is a M.A.D. I.P.A. (Get it? Mark, andrea, dave...) these hops gave their lives so that you could enjoy this beer apollo, cascade, centennial, glacier, simcoe and zeus.
Wild Rose Oktoberfest - (October '10)
Made using the best canadian barley malts available – superior pils, superior pale, vienna and munich - wild rose oktoberfest has a rich malt flavour. The complex sweetness from these specialty malts is well balanced with two noble hop varieties – tettnanger for bittering and saaz for aroma and flavour. True to the oktoberfest style, this brew was cold fermented with a blend of three german lager yeasts which add to the complexity. After three weeks in the fermentation tank, this brew was cold conditioned for an additional six weeks. Finishing at a strength of 5.5 % alcohol by volume, wild rose oktoberfest is a perfect complement to locally made sausages and homemade mustards.
Wild Rose Af23 Pale Ale - (May - July '10)
Q. are you in the know? A. af23 pale ale is named after the building which houses wild rose brewery and is a nod to the historical heritage of our home on the currie barracks. Af23 pale ale is brewed using superior pale 2-row as the base malt, a bit of munich malt, some c-60 (crystal malt) and a little bit of flaked oats to give this brew a smoothness on the palate. Extensive use of columbus hops creates a clean, long lasting bitterness while cascade hops provide a fresh grapefruit flavour and aroma. Dry hopping with a small amount of centennial hops finishes this fine brew. Consistent with our pursuit for authenticity with all of our seasonal brews, we used a special english ale yeast for this classic style.
Wild Rose Imperial IPA (Feb '10)
Pacific northwest meets alberta south. . . Again! Our imperial india pale ale (iipa) is created in the original double IPA style - robust and malty with high alcohol and a very intense hop flavour. Extremely hoppy with huge floral notes of pine and citrus, our imperial IPA expertly blends centennial, columbus and cascade hops with the finest alberta two-row barley and crystal malts. The result is a beer with sweet malt notes dominated by a very fruity grapefruit taste. To bump up the hop quotient even more, this brew was run through a hop back with cascade, centennial and columbus hops. Multiple dry hoppings add to the aroma 1st dry hop – centennial and columbus 2nd dry hop – cascade 3rd dry hop – cascade and centennial if you have never had a beer with lots of hops this is not the place to start. If you have, sit back, relax and enjoy the bitter ride that is our imperial IPA.
Wild Rose Cherry Porter (Nov - Dec '09)
Brewed using only the plumpest, ripest whole BC cherries, each glass of cherry porter is lush and creamy with a fruity aroma. Rich and sensual, the flavour is reminiscent of black forest cake with sweet chocolate notes and a slightly smoky character from the roasted malts. Originally emerging in the early 1700s, at the height of britain’s industrial revolution, the porter beer style virtually disappeared by the mid-70s. As part of the new generation of brewers, the team at wild rose brewery has created cherry porter as a variation on this classic style.
Wild Rose Kolsch (June - Aug '09)
Originally brewed in köln (cologne) , germany, kolsch is delicate and refreshing with a prominent, but not extreme hoppiness. You will find that it is less bitter than our czech pilz. Due to its bright golden colour, kolsch are often mistaken for lagers. In fact, this beer style is an ale which is top fermented at a relatively warm temperature and then followed by a cooler lagering, or aging, process. Perfect for summer days on the patio.

Wild Rose Af23 Pale Ale - (Aug-Sept '12)
Af23 pale ale is back! Named after our home on the currie barracks, this hoppy, unfiltered pale ale is balanced by using some of the finest alberta-grown malted barley: pale 2-row as the base malt, plus a bit c-40 (crystal malt) gives this brew a nice caramel smoothness on the palate. Exclusive use of bravo hops creates a clean, long lasting bitterness. Dry hopping with more bravo hops finishes this fine brew with notes of citrus and fresh pine in the flavour and aroma.
Wild Rose Hop Smashed in - (April-May '12)
Belgian style IPA this unfiltered amber coloured ale is a unique version of an IPA. A generous amount of hops are "smashed" into the brew along with a specially selected belgian yeast, to provide notes of fruit and spice. Unique in taste and aroma, this brew brings the best of belgian and north american brewing traditions together. Brewed using the best alberta-grown malted barley, wild rose hop smashed in belgian style IPA is assertively hopped with vanguard, ekg and cascade hops providing traditional IPA characteristics. Fermented with a belgian yeast lends a fruit and spicy clove character for an ale bolder than your average IPA. Unique? Yes. Delicious? We think so!
Wild Rose Belgian Style Dubbel - (Jan-Feb '12)
Inspired by the traditional beers brewed by trappist monks our belgian style dubbel is a great way to ward off the alberta winter chill. Reddish brown in colour with a rich malty sweetness, this complex brew will have you noticing new flavours with each sip! Brewed using the best alberta-grown malted barley as a base - this beer is enhanced with a blend of three specialty malts that provide sweet notes of raisin and plum. On the tongue it is rich and malty with a nice balance of clove-like spice from the belgian yeast used in fermentation. Full of flavour, this delicious brew is deceptively light on the palate. Enjoy one today! Food pairings ~ the dark malt and caramelized flavours of our belgian style dubbel makes it a great match with a beef stew, rib roast, or rich gamey dishes like lamb. Wild Rose Kolsch - (July-September '11)
Originally brewed in köln (cologne) , germany, wild rose kolsch is bright straw yellow in colour with a delicate and refreshing flavour. Brewed using a blend of the best alberta malted barley, it is balanced with the addition of tettnang, vanguard and german select hops. The result is a golden ale that has a gentle fruitiness and a prominent, but not extreme hoppiness. Due to their bright golden colour, kolsch are often mistaken for lagers. In fact, this beer style is an ale which is top fermented at a relatively warm temperature and then followed by a cooler lagering, or aging, process.
Wild Rose Altbier - (Mar-May '11)
Brewers mark, andrea and dave introduce another M.A.D. Creation. Altbier is a german-style ale originating in rhineland with a name which translates to “old beer.” this old style of making beer is a hybrid-process which involves brewing with a top-fermenting ale yeast and then aging at cooler temperatures, which is typical of lagers. The result is a clean, crisp beer which is full of flavour, yet easy drinking. Using a multi-step mash process, our brewers have created a mahogany coloured beer with amazing body and mouthfeel. This brew is cool fermented and cold conditioned resulting in a refreshing, clean tasting ale a blend of the best alberta-grown malted barleys - superior pale and superior pils – is enhanced by caramel and chocolate specialty malts. A combination of tettnanger and saaz hops round out this brew.
Wild Rose Cherry Porter - (Nov - Dec '10)
Brewed using only the plumpest, ripest whole BC cherries, each glass of cherry porter is lush and creamy with a fruity aroma. Rich and sensual, the flavour is reminiscent of black forest cake with sweet chocolate notes and a slightly smoky character from the roasted malts. Pairings... chocolate covered cherries, fig pudding, BBQ turkey (drink cherry porter instead of using cranberries - yum) , chocolate desserts.
Wild Rose Saison - (August - September '10)
Spicy, refreshing, rustic. Reflect as the hazy orange hue catches the sun while the refreshing, crisp citrus character and a classic saison dryness offer an unexpectedly smooth mouthfeel. Inhale the earthy, yet fruity aromatics influenced by the addition of ginger (zingiber officinale) and grains of paradise (peppery seeds from the aframomum melegueta plant) . Linger over the dry, slightly tannic finish enhanced by the belgian yeast and the spicy, citrusy character of saaz and east kent goldings hops. A perfect summer ale.
Wild Rose Czech Pilz (Mar '10)
The golden elixer is back! Once again, wild rose czech pilz will entice you with its easy drinkability and beautiful straw coloured hue. Crisp, clean and refreshing, this lager has been crafted to satisfy. With a distinct hop aroma and flavour, our czech pilz is sure to make you question what you may think a real pilsener is all about. Canadian superior pilsener malt cleverly mingles with a generous blend of saaz and vanguard hops to create a pure and natural european-style pilsener. Last year our czech pilz sold out in only three weeks so be sure you get your fill of this golden brew before it’s gone for another year. Very limited availability in 500ml bottles. On tap in the taproom and select locations around alberta.
Wild Rose Barley Wine (Jan '10)
Not a wine, of course, but an extra strong ale brewed to 8.7% alc./vol. The last time that we released our barley wine was in february 2008. not to be outdone by this fabulous brew, we decided to take the next batch to another level. This current release was brewed in january 2009 and has aged for 12 full months. Our barley wine is slightly sweet and malty with warm alcohol notes and the colour is a deep copper with an amber glow.
Wild Rose Dunkelweisse (Aug - Oct '09)
Radiant with a beautiful medium-roast espresso colour, wild rose dunkelweisse is silky smooth with suggestions of chocolate, bananas and cloves. With a style deeply rooted in bavarian brewing history, this dark unfiltered wheat beer is brewed to 5.5% alc./vol., and is highly complex in both its flavour and aroma. Our “dunkel” is made from a mixed mash of wheat and barley malts as well as a special blend of caramelized and roasted malt expressing a rich colour and wonderful complexity. Notes of coffee and a hint of smoke join together to create a finish that lingers long after your glass is empty. Pairs well with spicy ginger dishes and banana splits!
Wild Rose Maibock (May - June '09)
Traditionally, maibocks are brews with annual releases which have become synonymous with the celebration of the return of spring. To bring together all of the complex flavours, this lager requries additional brewing time (more than 8 weeks) . Bottom fermented, our maibock has an enticing copper colour and an intensely malty aroma due to the munich and vienna malts that comprise almost 30% of the malt used. Gently hopped to profile its malt character, this 7.0% alc./vol. Brew has an assertive alcohol character in both its aroma and finish.
