Scotch Whisky
There is an entire world of Scotch that is equally as complex as wine. The grain, still, peat, oak, and water (plus numerous other variables) all impact the sip of each Scotch in your glass. The regions vary and ultimately show "terroir" in a spirit. The sweetness of the highlands, floral tones of the lowlands and briny and sometimes smoky notes of the islands

Irish Whiskey
Do not lump the Irish and Scottish together as not only do they take personal offense, but the whisk (e)ys couldn't be any more different. For starters the Irish use an "e" in their spelling! Irish whiskeys tend to be sweeter and less oaky and smoky than their counterparts across the North Sea. The best of Irish whiskey rivals the greatest whiskeys of the world. American Whiskey
Whiskey only needs to be a spirit made from fermented grain. Therefore, vodka is technically a whiskey, though we surely don't want to lump the odorless/tasteless mixer into the realm of the odorful/flavorful whiskeys. Typically we think of Bourbon when America and Whiskey come up, though there are "Scotch style" whiskeys made in the U.S. of A. as well as Rye and others

Canadian Whisky
Smooth is the one word that comes to mind with Canadian whiskies. They are generally a blend of multiple gy grains, with corn being the primary one. The style is lighter than American Bourbon. The flavor is similar at times to American rye whiskey as traditionally the Canadians used a large percentage of rye. Crown Royal has taken its place atop the mountain of whisky here. Sparkling Wine
Everyday Fizz
Just because the wine is fizzy, doesn't mean it is Champagne. In fact there is a great deal of French sparkling wine produced that cannot be called Champagne. Italian Prosecco and Spanish Cava are the most widely known examples. While both of these can be tremendous, don't overlook the other regions listed below. Here at the Dive, we encourage you to start your meal with a glass of fizz. It will calibrate/cleanse your palate and start your meal off on the right foot

Grower Champagne
AKA Récoltant Manipulant. This is real wine made by a real person, not a large luxury good conglomerate. The individuality is a refreshing change of pace from the often monotonous tone that Champagne has come to be recently. Please think about enjoying a bottle of Champagne with dinner, not just with a little hat and a horn on New Year's

Big House Champagne
AKA Negoçiant Manipulant. Consistency is the one word that these great houses love to tout and with good reason. The wines are consistent year to year with their non-vintage (NV) blends, thus forming a "house style." Crisp & Clean
A glass of water. Gin & Tonic. Lemonade. What do these have in common? All very refreshing. This is an adjective that is way too overlooked. The notion that wine must be powerful and oaked is total nonsense. These wines are meant to be fun to drink with or without food. Wines that whisper at you more than shout, caress rather than grope. Get it?

Have you ever bitten into a rose petal? Smells floral and sweet, but doesn't quite taste the same. The same can be said for much of this selection. The aroma leads you to believe that the wine is much sweeter than it really is. Torrontés, Marsanne, Roussanne, Gewürztraminer, Viognier, Grenache Blanc and Pinot Gris amongst others

Riesling | Scheurebe
Sweet & Sour
Too many people assume that all wines fall into two categories: sweet & dry. The lovers of great Riesling and Scheurebe know the truth though. These wines (even the sweetest examples) start sweet and finish with a polarizing clarity. NOTE: Not all of these wines are sweet, thus we made it easy for you, (*) indicate sweetness levels from Dry* to Sweet***

Savory Delight
These wines bring into play the fifth dimension of flavor, savory. While these are clean, crisp and a touch aromatic, they have a structured body. A few of these may have a touch of oak, but no more than that. Grapes like Grüner Veltliner, Falanghina, Pinot Blanc, Furmint and Albariño fit this mold perfectly. Certainly not to be missed

Chardonnay | Rosé
Decadent & Rich
While pigeonholing Chardonnay to only one category is unfair, it makes perfect sense. This incredible grape has quickly gained a following and yet an illustrious distaste all in the name of ripeness and oak. Burgundy is the original home to Chardonnay and is making a quick comeback as the quality has never been higher across the board

Pinot Noir | Nebbiolo
Iron Fist in a Velvet Glove
Pinot Noir and Nebbiolo, two grapes that pack a lot of punch but come packaged in a soft, fuzzy wrapper. These grapes epitomize the idea of power without weight. You may call these grapes "thin, " but look beyond the color. The intricacies lie deep in the glass, well past the initial aroma or even the finish. In addition, we can't forget the ever-so floral Piedmontese grape, Ruche. Now offered by the glass

Sangiovese | Tempranillo
Focused & Flamboyant
Sangiovese & Tempranillo: two iconic grapes of their respective countries. These varietals bring a focus and clarity unlike many wines with this much body and weight. The tight, focus of Sangiovese evokes sour cherries with a laser-beam of acidity, while Tempranillo is riper cherries with tobacco and oak notes. Both of these are severely under appreciated, drink up!

Opulent & Decadent
It rhymes with heritage and it is also called a Claret (claire-it), stumped? It's Meritage! The traditional Bordeaux varietals blended together give strengths where the others are weak. Cab Sauv, Merlot, Cab Franc, Malbec, & Petit Verdot. We added a few other "Bordeauxesque" wines as well that fit the bill as well!

Seamless & Juicy
It will all make sense when you flip the page, but Cabernet Sauvignon is like a donut. It has a beautiful start and finish but lacks a mid-palate. This "hole" in the Cab is filled perfectly by Merlot. Merlot is lively, juicy, seamless and captivating (when done right). Cabernet Sauvignon
Chewy & Powerful
Many people regard Cabernet Sauvignon as the king of grapes. It is the perfect melding of ripe, sweet fruit with large, powerful tannins. The use of oak is necessary with this immense grape, the amount is up for discussion. It is grown all over the world, and often times blended with other varietals in order to attempt perfection. Don't forget the large slab of beef with a bottle as well

Sweet Wines | Dessert Wines
Selections by the glass or bottle
Late Harvest
What happens when you pick a grape much later than usual? The sugars are much higher, thus resulting in a sweeter wine. The selection here are naturally sweet wines using the late harvest process rather than fortifying (adding alcohol). The natural acidities are apparent. There are two whites and two reds each of which is flat out yummy and appropriate for many things

Madeira
The most overlooked fortified wine in the world has to be Madeira. Prior to the turn of the 20th century, it was the most consumed wine in America. What happened you ask? Well for starters Prohibition. Then it was a general "uncoolness" of sweet wines that swept across the country like the dust bowl. Think how many sweet things you have in a day and tell me you don't like sweet: OJ, Diet Coke?

Sherry
If Madeira is the most overlooked wine, then Sherry MUST be the most misunderstood. This is not the wine your grandmother drank warm and by herself when no one was looking. Sherry is one of the great fortified wines of the world. It has a nutty, brinyness with great complexity. This goes from the dry versions up to the sweet PX

Port
Probably the most well known sweet wine in the world. Port wears many coats, a light jacket (Tawny), fleece (Late Bottled Vintage), Overcoat (Ruby), Heavy Parka (Vintage). One is not better than the other, just different. Often the vintage ports need more time to unwind and open up with decades of aging. Tawnys can be the most interesting and nuanced. LBV and Ruby offer great "drink now" value

Barolo Chinato
Barolo Chinato is that soothing and bitter after dinner drink that comforts you (and your stomach) after a big meal. What is it exactly? It is basically an aged Barolo wine that has been fortified and blended with a secret blend of spices. This is a special drink, made is very small amounts

Banyuls
Way on the southern tip of France is the Banyuls wine region in Roussillon. The grapes are grown on the steep slopes that plunge into the Mediterranean towards the Spanish border. Grenache and Carignan are the main varietals used. This is a fortified wine offering jammy fruit and spice characteristics

Arak - the Spirit of Lebanon
Selections are served by the shot on ice with a side of water do dilute as you wish, but first a quick dose of knowledge: Arak, commonly called 'Lion's Milk' is a traditional spirit that is popular throughout Lebanon, Iraq, Syria, Jordan, and Israel. Arak is made by distilling fermented white grapes and then adding high quality anise for flavor. It is aged in clay jars before release. Arak is pure with no other added ingredients other than water. This makes the process similar to cognac with the exception of anise and oak aging. Arak is usually served on iced mixed with 1/3 to 2/3 water. This dilution causes the clear liquor to turn to a translucent milky white color because of the essential oil in the anise. Arak is commonly served with mezza, which may include several traditional dishes but it is great anytime. If you do not like black licorice flavor, then sadly this drink is not for you. We have plenty of other libations for you to indulge your palate with
