Joe's Italian Deli sells a denser ricotta (perfect for cheesecakes or mixed with maple syrup), buratta, and trecia, dried mozzarella stretched into a plait.

My favorite deli around. Joes has the freshest mozzarella made in house. Their sandwiches are fantastic.
