(Mantanzas style cuban pot roast) this recipes was given to e by my family in mantanzas, Cuba. start with a choice rump roast; slit the center all the way through, stuff the with cuban chorizo. this adds a smoky flavor. add seasonings; green peppers, onions, garlic, potatoes, olives along with special island spices. place roast in oven and bake until tender. served cuban style. with boiled cassava and garlic sauce for added flavor
