Kevin P.: 魷魚米粉的主要材料有米粉、魷魚、豬肉塊、青菜和湯汁。米粉炒至香熟;乾魷魚則浸發後,置入開水中煮熟,再切成薄片,非常脆口;豬肉至少滷煮兩小時,使到肉質順滑、鹹中帶香;至於湯汁則以江魚仔及五六種配料熬煮而成,其秘訣是以炭爐熬煮數個小時,鮮味恰到好處,濃稠適中令米粉更潤滑爽口。要吃魷魚米粉就要趁早,因為老闆娘每天早上6點多開檔,生意超好時,在早上9點就賣完。
